Our story
Nathan was diagnosed with “Celiac disease” (gluten/ wheat allergy?) in 2005, before it was cool. A doctor told him he was going to run some tests, and when the results came in he told Nathan, “You have Celiac disease, did you know you had Celiac disease? No? I’ll be right back”, and then left the room. Was Nathan a bit worried about being told he had a disease he’d never heard of? You bet. And he didn’t have a cell phone back then to look up Celiac disease to see what it was, for all he knew, he was dying. The doctor eventually returned with a print out and told Nate, “Go home and read this.” Nathan quickly found out he wasn’t going to be able to eat most of his favorite foods, and soon found out from trial and error that he was VERY sensitive to gluten.
Fast forward to today, Nate is a happy and healthy guy, but his life is limited in many ways by gluten. He only eats at dedicated gluten free restaurants (mostly), keeps no gluten in the house (much to his kids annoyance), and has a hard time doing what he loves, traveling. Knowing other people have the same issues, and knowing Western North Carolina is a beautiful place to visit, he and his wife, Natalie (the amazing cook), decided to open up their home to other Celiacs or gluten sensitive individuals to be able to enjoy all WNC has to offer, without having to worry about gluten. Hopefully your vacation will be ever more stress free knowing you are staying somewhere with hosts who understand what being gluten free is all about.
Why a gluten free vacation rental?
Whenever we travel we try to find a space that has a kitchen, as there usually aren’t very many places we feel safe eating out. Even when visiting family, we usually rent a space with a kitchen so we can cook safely. But there is always the worry that the kitchen is contaminated. We have to wash everything we use, place food we cook in the oven on parchment paper, and always worry a little that Nate might get sick. We know we aren’t the only ones who live this way, and we want to give other people a space we would love to have, on that is totally, always, gluten free!
